Spicy Chicken Wings

Ingredients:

500gm Chicken wings

For Marination:

  1. 2 tbsp Red chili sauce

  2. 1 tbsp ginger garlic paste

  3. 2 tsp dark soy sauce

  4. 1 egg white

  5. Salt to taste

For Batter:

  1. 1/2 cup water

  2. 2 tbsp Deggi mirch powder (red chili powder)

  3. 1 tbsp vinegar

  4. 1tbsp soy sauce

  5. 1/2 cup corn flour/ cornstarch

  6. A pinch of powdered sugar

For Tempering:

  1. 1/2 tbsp Ginger ~finely chopped

  2. 5-6 garlic cloves ~ Chopped

  3. 2-3 green chillies ~ chopped

  4. 3 tbsp Spring onion white ~ chopped

  5. 1 capsicum / bell pepper ~ finely chopped

For Sauce:

  1. 1/2 cup water or chicken stock ( for a rich flavour)

  2. 1/2 tbsp chili flakes

  3. 2 tbsp tomato sauce

  4. 1 tbsp red chili sauce

  5. 1 tsp dark soy sauce

  6. 1 tbsp coriander stem (finely chopped)

    For cornstarch slurry ( 1/4 cup water + 1.5 tbsp cornstarch)

For garnishing:

  1. 1 tbsp spring onion greens (chopped)

  2. 1 tbsp Fresh coriander (chopped).

Instructions:

1. In a bowl, combine red chili sauce, ginger garlic paste, soy sauce, salt and egg white. (marination)

2. Coat the chicken wings evenly in the marination. Set it aside for 30 minutes.

3. Prepare the batter by mixing 1/2 cup water, 2 tbsp Deggi mirch powder (red chili powder), 1 tbsp vinegar, 1tbsp soy sauce, 1/2 cup corn flour/ cornstarch, A pinch of powdered sugar.

4. Remember to mix the batter properly to avoid lumps.

5. Coat the chicken wings evenly in the batter.

6. Heat oil in a deep fryer or a large pot on medium heat. Carefully add the wings in small batches and fry them until golden brown and cooked through. This usually takes about 6-7 minutes. Place the fried wings on a paper towel-lined plate to drain excess oil.

7. For preparing the sauce, mix water/chicken stock, chili flakes, tomato sauce, red chili sauce, dark soy sauce, and coriander stem in a bowl.

8. Heat a saucepan over medium-high heat, put 3 spoons of oil used to deep-fry the chicken.

9. Add ginger, garlic cloves, green chili, spring onion white and capsicum for tempering. Saute until golden-brown.

10. Now, add the prepared sauce and bring it to a gentle boil.

11. Add the cornstarch slurry (cornstarch + water) to the sauce and stir well until the sauce thickens.

12. Add the fried chicken wings to the sauce and toss gently to coat the wings perfectly.

13. Garnish with chopped spring onion greens and coriander.
