Schezwan Rice

Schezwan rice is a popular Indo-Chinese recipe that originated in the Sichuan province of China. It is a spicy and flavorful dish that is made by stir-frying cooked rice with a variety of vegetables and sauces, including soy sauce, vinegar, chili sauce, and Schezwan sauce. The dish is typically made with long-grain rice and vegetables such as carrots, peas, and bell peppers. The key ingredient that gives this dish its signature flavor and heat is Schezwan sauce, which is made from chili peppers, garlic, ginger, and spices. Ingredients for cooking rice:

  1. 1 cup basmati rice

  2. 4 cup water

  3. 1 tbsp ghee

Other Ingredients :

  1. Olive oil

  2. 5-6 finely chopped garlic cloves

  3. 1-2 finely chopped green chillies

  4. ½ tbsp red chilli flakes

  5. spring onion

  6. 1 finely diced capsicum

  7. 1 finely diced carrot

  8. ¼ cabbage cubed

  9. 3 spring onion

  10. 1 tbsp vinegar

  11. 2 tbsp green chilli sauce

  12. 2 tbsp red chilli sauce

  13. 2 tbsp dark soya sauce

  14. 4-5 tbsp schezwan chutney

  15. salt to taste

  16. 2 tbsp finely chopped coriander leaves

Directions for cooking rice:

  1. Rinse the rice 4-5 times to remove the excess starch and soak the rice for 30 minutes.

  2. Put 4 cups of water in a cooking pot and let it boil over high flame, add ghee or oil to it.

  3. Gently strain the soaked rice and put it in water.

  4. Let it cook over medium low flame until the rice is cooked about 90% or almost cooked.

  5. Strain the rice and rinse the rice in water so they don’t stick. Set it aside.

Directions for schezwan fried rice:

  1. Heat 4 tbsp olive oil in a Wok or Kadai, add garlic, green chillies and red chilli flakes and sauté it.

  2. Add onion and capsicum and stir fry until translucent.

  3. Add carrot and cabbage and stir fry on high flame until they become slightly brown.

  4. Add vinegar, soya sauce, green chilli sauce, red chilli sauce, schezwan chutney and salt (to taste).

  5. Add the cooked rice and stir well. Garnish with chopped spring onion greens and coriander.

Ready to serve!
